One thing's for sure, we love to eat in our house - and I love to cook. I stumbled upon this recipe over a year ago on YOUTUBE and tweaked it a bit, since then I have been making it almost every week. This is an absolute winner! The recipe below is good for 2-4 people dependent on their appetite.
I would suggest that you prep the veggies before cooking, it will make everything else so easy!

What you will need:
Pan
Wooden spoon
Knife
Bowls for veggies when prepping
Ingredients:
4-6 Chorizo Sausage Cut (or any sausage you prefer, I have used boerewors, bangers etc)
1 medium sized onion chopped into thin slices
4 Fresh garlic cloves chopped
1 Tbsp hot pickled Jalapeno (you can use mild)
1/2 Red bell pepper chopped
1/2 - 1 tin of 4 beans in brine
1-2 Tsp Balsamic Vinegar
1 canned tomatoes
4 Eggs
Coriander
Oregano
Feta Cheese/ Brie Cheese
Serve with:
Avocados
Ciabatta/Tortillas/Toast
Lets Cook:
1. Braise sausage in pan until golden brown
2. Add garlic and onion to the pan with the sausages and sautee until soft
3. Add the pickled Jalapenos and cook for 2-3 minutes
4. Add the Red Bell Pepper and cook for 2-4 minutes
5. Add the Balsamic Vinegar and cook for 2-3 minutes
6. Add the Canned Tomato and Beans and cook for 5-7 minutes on low heat
7. Add tspn oregano and cook for 1-2 minutes
8. You can fry your eggs on the side and just add on top of the mix or you can cook the eggs with the mix (I prefer cooking it with the mix)
9. Top with your preferred Cheese (at this point you can switch off the pan)
10. Garnish with Coriander and enjoy!
It might seem like a lot, but as soon as you get the hang of it, it will be super easy and I assure you that it will definitely become a staple!
